Making homemade jam is not complicated at all. The key is to use good, ripe fruit, work cleanly and follow the correct cooking time. The more aromatic the fruit, the more intense the flavour of the jam.
This recipe makes a particularly fruity seedless raspberry jam. The puréed raspberries are passed through a fine sieve to remove the seeds. Lime juice adds a pleasant freshness, while Amaretto gives the jam its distinctive aroma.

Extra smooth: After puréeing the raspberries, pass them through a fine sieve for a wonderfully smooth, seedless jam.
Keep an eye on the cooking time: The 5 minutes start only once the fruit mixture is boiling vigorously.
Add the Amaretto at the end: Add it shortly before filling the jars to preserve its delicate aroma.
